Like vitamins, minerals are also required in very small quantities in our food. There are about 20 minerals, most of which are present in minute quantities in the body. Most of you must be knowing the functions of these minerals. Iron and calcium are the important minerals and require most consideration while selecting diets. If our food intake provides the recommended amount of these two minerals, our needs for the other minerals are met.

Iron

The amount of iron present in our body is very small but it is very vital to our health. Blood cells contain a substance called hemoglobin, the red colouring matter of the blood cells, which in turn contains iron. These red blood cells are the carriers of oxygen from the lungs to the tissues, and carbon dioxide from the tissues to the lungs. During the performance of this function, these blood cells wear out and are then broken down by the liver. The iron from them is reused in the formation of fresh hemoglobin.

Iron is also stored in almost all body tissues, in the liver, spleen and bone marrow. Once the body has sufficient iron, the question of whether we need more iron in our daily diet arises. The answer is yes. Dietary iron must be supplied to compensate for daily loss through excretion and during the period of menstruation for women. Iron is, therefore, important because it is an essential element of both blood and muscle hemoglobin and is important for the prevention of nutritional anemia - a condition in which there is a reduction of the number of red blood cells or hemoglobin in the bloodstream which causes a depletion ,of vigor and energy.

Calcium

It is the most abundant mineral element in the body. An adult man weighing about 55 to 60 Kgs would have approximately 950 grams of calcium in the body. Out of this amount, over 95 per cent calcium of the body is found in the bones and teeth while the balance is in the blood and body fluids. Calcium is needed by all age groups. Small losses of calcium occur daily in the body's waste products. Calcium levels of the blood and the body fluids must be maintained. When the calcium intake in the body is insufficient, calcium is drawn out of the bones to meet the blood and the body fluid requirements. This is the reason why older people usually have fragile bones as a result of the withdrawal of bone calcium to meet blood and body fluid needs. Calcium requirements also increase during pregnancy and nursing mothers require increased calcium, not only to meet their own requirements but also for milk production in the body.
